Adjust Servings:
1/4 lb Butter Room temperature
1 cup Sugar
3 Eggs
1 teaspoon Pure Vanilla Extract May substiture anise.
2 cups Flour Sifted
2 teaspoons Baking Powder
1/8 teaspoon Salt
1/2 cup Almonds Chopped or slivered

    These traditional biscotti recipe comes from Emanuela  (Nella) & Catherine Chirchirillo. Rolled into logs, baked, sliced, then oven toasted again, these biscotti are delicious especially with coffee!

    Cream butter and sugar together.

    Add eggs.

    Add eggs one at a time and blend well.

    Add vanilla.

    Sift dry ingrediants.

    Gradually add dry ingrediants into the soft dough by hand.

    Add almonds.

    Divide dough into thirds.

    Gently roll dough into logs.

    Logs are one inch wide by 3/4 inch think.

    Grease baking sheet.

    May use vegetable fat, i.e. Crisco.

    Bake logs at 350 degrees 15 to 20 minutes until golden.

    Cool ten minutes.

    Cut one inch slices on an angle.

    Turn cookies on side and return to oven for five minutes on each side.
