2 heads Broccoli
32 oz Vegetable Broth
2 Tablespoons Garlic
4 Tablespoons Olive Oil
1 Tablespoon Salt
1 Teaspoon Pepper
32 oz Water
1/4 - 1/3 lb Pasta Ditalini
Romano Cheese Optional

Like all soups, this soup is by far better on day two!

Steps

Done

Wash two large bunches of broccoli. Cut florets and only the most tender stems into small bite-size pieces.

Combine broccoli, broth, water, garlic, salt, and pepper in a pot and bring to a boil.

Add olive oil and simmer for 30 minutes.

Turn off heat and use a potatoe masher to break up broccoli into much smaller sizes nearly pulverizing.

In a separate pot, bring water to boil, add additional salt and pasta of your choice. Ditalini is most commonly used for this soup. However, select your favoirite pasta! Do not over cook the pasta! Drain and keep separate from the soup adding it to each bowl.

Serve small amount of pasta in the bowl, add soup on top, use imported Romano cheese to taste on top (optional).
